Dietary Benefits


  Your daily diet should be everyone’s priority. When I was younger I went through some health issues and one way I was able to overcome these challenges was changing my diet. When my nephew was diagnosed with leukemia it reminded me how we both had to find a way we can appreciate our veggies. Boosting his immune system was a must, he was relapsing each time he had chemo from the side effects. I felt it was my duty to support him, I felt life prepared me to be his coach. My first advise to my nephew on how to overcome cancer is mind, spirit, faith and food. These 4 ingredients helped me win this war.

   Most people tend to forget that grandma’s homemade recipes are the most healthy way to improve what some medicines can’t do and from their side effects. Most importantly an extra touch of grandma’s love. My mother prepares this rich and tasty soup with red peppers which is the highest of vitamin C contains beta-carotene, antioxidants and anti-inflammatory benefits. Broccoli a good source of vitamins K and C, potassium and fiber. Vitamin C builds collagen, forms body tissue, bone, helps cuts and wounds heal. Carrots helps protect against cancer, important for oral health, high source of antioxidant. Ginger relieves nausea, motion sickness and pain. All of these benefits  are some of the side effects chemotherapy causes to their patients. After we started giving him these ingredients his blood counts were at his highest and the side effects minimize. Thank God for grandma’s!


Stir fry vegetables

Ingredients:

  • 1 cup of broccoli
  • 1 cup of carrot
  • 1 cup of celery
  • 1/2 cup red peppers
  • 1/2 onion
  • 4 green onions
  • One clove of garlic
  • 1 tps olive oil
  • 1 tsp ginger
  • 1 tsp flour
  • 1 tsp sesame oil
  • 1/2 soy sauce
  • 2 tps of water
  • salt and pepper for taste

Preparation:

Heat a wok or a saute pan over medium low heat with olive oil. In the pan mix in the garlic until golden brown. Add the broccoli, carrots and steam. Mix in a separate cup the soy sauce, sesame oil, water, salt, pepper and flour. Than add the soy sauce mix to the rest of the ingredients and steam for 5 minutes. Add the rest of the ingredients in the pan celery, onion, green onions and ginger than stir for a few minutes.

 


 

Vegetable soup

Ingredientes:

  • 1 cup of potato
  • 1 cup of pumpkin
  • 1 cup of malanga
  • 1/2 cup red peppers and green peppers
  • 1/2 onions
  • 1 cup of cabbage
  • 1 cup of carrot
  • parsley
  • 1 cup of celery
  • 2 cloves of garlic
  • 1/2 gallon of water
  • 2 cups chicken breast
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 bouillon
  • 1/3 lemon
  • 1 tps olive oil

Preparation:

Cut into small squares the chicken and season with salt, pepper and lemon. Add oil in a pan, pour the chicken and stir until golden.  In a separate pan add the water to boil. In the boiling water add the pumpkins, malanga, potatoes, and garlic until softened.  Add the rest of the ingredients to the boiling pan and leave for 20 minutes. For fewer calories you may remove the potatoes and pumpkin.
